Jean-Christian Jury was born in Toulouse, France and trained there as a chef. His most recent restaurant, La Mano Verde in Berlin (2008-2015) has been hailed as one of the world’s foremost vegan restaurants. He is the author of the Phaidon cookbook, Vegan: The Cookbook.
